Bodega Ruiz Torres, located in Cáceres, Extremadura, has been crafting exceptional wines since 1870. This family-owned winery has built a reputation as one of Spain’s finest, with its wines enjoyed in over 35 countries. Now in its fourth generation, the winery focuses on meticulous wine production and aging, bottle reflects the family’s dedication to quality. Bodega Ruiz Torres is known for its young wines, including Crianza and Reserva, as well as cavas, sparkling wines, frizzantes, and vermouth.
Situated in a stunning area of Caamero, just 10 kilometres from the Royal Monastery of Guadalupe, the winery features a grape harvest room, laboratories, and a production area equipped with stainless steel tanks. The aging cellar, crafted from French and American oak, and the bottling and storage facilities contribute to the winery’s commitment to quality. The vineyard thrives on slate soil at an elevation of 800 meters, where a unique microclimate allows grapes to ripen slowly, enhancing their quality. This careful approach has earned Bodega Ruiz Torres numerous awards in both national and international wine competitions.
After more than 150 years caring for their vines, the Ruiz Torres family believe the fruit they produce are like children you see being born. For the family, these vines are the most important legacy of the generations before then – parents and grandparents. They instilled a way of life and doing things, which have led Bodegas Ruiz Torres to where they are right now.

The grapes are harvested at their optimal ripeness. After destemming and pressing, the must is obtained. Selected yeasts are added, and the must ferments at a temperature between 15 ° C and 17 ° C. Once all fermentations are complete and the wines are stabilized, they are blended, and the resulting wine is bottled along with the tirage liqueur.
The bottles are then transferred to underground cellars (at a constant temperature of 17 ° C) where the second fermentation takes place, followed by a period of aging in contact with the lees. In total, the wine will spend a minimum of 9 months in the cellar, after which riddling (decanting the bottles to facilitate settling and subsequent removal of sediment) and disgorgement take place, the moment when the sediment deposited after the second fermentation is removed.
A quantity of dosage liqueur is then added, which will determine the residual sugar content of this brut cava. Finally, the bottle is sealed with a cork.
Yellow colour with greenish highlights, fine bubbles forming a continuous stream. Reminiscent of freshly baked bread. On the palate, a well-balanced acidity is appreciated, and the retronasal aromas recall fruity notes.
Pair a glass of Cava with olives, potato chips, prawns, calamari, ham, and cheese. It also makes a perfect complement to foie gras, caviar, and fish.
Ready to drink upon release.
