Castello di Radda, Vin Santo del Chianti Classico, D.O.C. Occhio di Pernice, 2018, Tuscany, Italy

Producer Profile

Castello di Radda is owned by the Beretta family and located in the heart of Tuscany, Castello di Radda is surrounded by Sangiovese vineyards and overlooks the medieval town from which it takes its name.

The territory of Radda in Chianti is one of the nine municipalities that make up the UGA (Additional Geographical Units) of Chianti Classico and one of the oldest in the entire appellation. It is characterised by low temperatures, among the coolest in the entire Chianti Classico DOCG production zone, significant fluctuations between daytime and night time temperatures, clayey soil rich in heavy stone and the presence of abundant wildlife. An area rich in woodland and old farmhouses, wonderfully beautiful and difficult to cultivate, excellent for growing Sangiovese grapes of the highest quality.

Respect for the land, protection and defence of the territory and vineyards, disciplined choices, constant quality, loyalty to the vine and the terroir: these are the values that guide our every choice.

Organic by choice and vocation – The organic conversion of the vineyards began in 2017 and was completed in 2020. Today, the 40 hectares of vineyards in production are fully certified organic and lie on the middle hills of Radda in Chianti, between 350 and 450 metres, and Gaiole in Chianti (Vertine), between 400 and 450 metres. The Radda vineyards enjoy south-easterly/south-westerly exposure and clayey-calcareous soils, rich in stone and poor in organic substance.

Castello di Radda has steered its agricultural management towards production that favours low yields, managed with constant manual interventions aimed at preserving only the best part of the fruit. Each plot is cultivated according to the needs of the soil, the plants and the microclimate. The agronomic operations are planned and adapted to the needs of each individual plot: from fertilisation to pruning, from thinning to grass cover, the aim is to support the natural life cycle of each plant, without forcing it.

Viticulture

Sourced from a south-east/south-westerly exposure in the Municipality of Radda in Chianti.

Winemaking

The grapes are selected by hand and laid out on racks. The withering process takes a few months and allows the dehydration of the grapes, concentrating the sugars and aromatic compounds. The grapes are gently pressed using a traditional press and the must is transferred to casks where it undergoes slow, natural fermentation, thanks to the use of a native yeast known as the “mother”.

Ageing continues in the same casks for at least four years, in rooms exposed to considerable seasonal temperature variations, which have a positive influence on the complexity of the wine’s aromas. Approximately half of the precious liquid evaporates during this long period of ageing, becoming more concentrated. The wine spends at least three months in the bottle before being released for sale. In keeping with tradition, the wine is not filtered and the formation of a slight deposit on the bottom is possible and natural

Tasting Note

Dense, bright garnet red with golden highlights. The bouquet is complex and enveloping, dominated by aromas of dried apricots, dried figs and dates. Scents of roast almonds mingle with notes of cinnamon and cloves. Aeration reveals an intense aroma of chestnut honey.

Sweet and deep in the mouth, the olfactory notes unfold on the palate revealing its enveloping nature. The finely creamy texture is enhanced by remarkable persistence
