Nick and Trudy Stacy are backed by decades of industry experience and time-earned wisdom, sourcing fruit from some of the most exceptional yet impossible to access vineyards.

With each wine that they craft, every piece of the winemaking puzzle has been carefully considered and deftly executed. However, knowing who, what, where and when is not enough.

With over thirty years in the wine industry, Nick & Trudy have established long term relationships with growers & vignerons within the key regions of Margaret River, Mount Barker, Adelaide Hills and McLaren Vale. The secret to making these wines lies within relationships that take time and trust to forge, something that simply can’t be bought. The key to these crucial relationships is held by their founders, Nick and Trudy.

Viticulture

Landsdale Vineyard, Mount Barker WA, planted 1996 east-west facing rows, ironstone gravel/loam soils, pesticide, herbicide-free vineyard practices.

Winemaking

Machine harvested, 10 days on fermentation on skins in open fermenters with hand plunging twice daily during ferment, reduced to daily and then weekly until the tannins were supple and integrated, cultured natural yeast, tank pressed, 16 months in seasoned French oak barriques. Minimal filtration, vegan fined and minimal sulphur on bottling to keep the wine fresh and lively.

Tasting Note

Dark purple and bright in colour, with classic cool mint and lifted cassis bouquet with warm, cedar oak aromas. A brooding palate of blackcurrant, plums, chocolate and mocha flavours jostle for position, while a generous fruit ball forms in the mid-palate. Quality oak and time ensure long, soft and integrated tannin structure, wrapped in firm acidity – giving this Cabernet enhanced texture and complexity.

Goes well with

Pair with slow-roasted lamb, BBQ’s and firm cheeses.

Cellaring

Will continue to improve with careful cellaring for 10+ years.
