Sfuso is a wine that pays homage to the frothing red and white wine, fresh from the most recent vintage and straight out of tank, that is the bedrock of Italian wine drinking.
To be found in the ever-disappearing ‘alimentari’ in all-but-lost Tuscan villages and drunk under the soft, spring sunshine, with doorstop slices of Tuscan bread, redolent with wedges of aged pecorino and replete with slivers of salty prosciutto Toscano; maybe with even the occasional fegatello thrown in for good measure.
Sfuso literally means ‘not packaged’ and whilst ours is, its only because we can’t bring the tank to you, or we would.
Clante’s Sfuso is a riff on this most simple but fundamental of wines – it would be a vino sfuso watered down or sweetened with sugar that would be most young Italians first introduction to wine.
All wine drinking begins with Sfuso.
2024 is a field blend of a number of different white varieties, including Vermentino, Petit Manseng and Marsanne that are picked, pressed and fermented all together with as little fuss as possible.
Left on heavy lees after ferment and bottled as the summer began.
Low sulphites.
Fermentation and ageing in stainless steel only.
5000 bottles of 0,75cl produced.
Bright, pale-golden colour. Intense aromas of confit lemon, white peach and honey that follow through on the palate, enhanced by fresh acidity and a long finish.
So many choices for this wine – Grilled prawns, calamari, squid, oysters, and seafood risotto. Pesto pasta, herb-crusted fish, grilled vegetables, and dishes with lemon and olive oil.
Fresh goat cheese, feta, or mozzarella.
Fennel-spiced pork sausages or roasted chicken.
3-5 years with careful cellaring.
