Producer Profile

Henri Boillot is a benchmark Côte de Beaune producer renowned for the exceptional quality of his wines. Using parcels of vines, which cover 19 hectares across the appellation with some vines more than 60 years old, his seriously impressive wines exhibit an intense minerality, elegant structure and have the potential to age for many years.

Based in Meursault, Domaine Henri Boillot is strategically placed between Puligny-Montrachet and Volnay, the two appellations that have become its specialty. The domain has set itself a firm objective: to express, through its wines, the essence of the vines and their distinctive climates.

Viticulture

Being attuned to the environment of the vines is primordial. Recently, they have shifted their focus on finding ways to help them withstand climatic changes. At other times, milder winters meant adapting to changes in the growing cycles of the plant. The winemakers’ role is to help the plant to adapt to the varying seasons, every year. ‘A vine remembers; if you mistreat it, you will suffer the consequences: low yields; years of negligible production.’

Volnay is mainly limestone and schist. These factors, combined with the altitude of the vineyards – between 230 and 280 metres – result in wines that have concentrated aromas and a unique finesse.

Winemaking

Combining their distinct personalities, father and son work together on the domain. Both make great wines: Henri the whites, Guillaume the reds.

Henri Boillot is the purposeful, passionate founder of the domain, which he steers firmly to the highest standards. His strong work ethic and dedication have resulted in an exacting, well-run domain, which he is proud to pass on to the next generation. His present focus is devoted to his precise, elegant white wines.

Having worked his way up the echelons to head of viticulture, Guillaume is now in charge of the red wines at the domain. He has subtly wrought his own style into the vinification process, revealing the very best of the terroirs, especially in Volnay. His emphasis on sensitivity, and the pleasure he takes in his work, can be felt in his wines, which are full, rounded, sensual and fine.

Tasting Note

Lovely upfront ripe fruit, cherries and red berries, yet delicate. Soft and delicate on the palate with more of the same berries flavours and fine silky tannins.
