Viticulture

The winery and vineyard are located by the Andes range, San Rafael, Mendoza Province. They can be found near an area of marsh on the north riverbank of Atuel River. At 34° 50° south latitude, east of San Rafael mountain range, at the foot of Cerro Negro hill.

The diverse properties of these lands give each of these wines a unique identity.

The soil is deep, permeable and poor in organic matter. These are key properties to produce great wine. Furthermore, the lands in the area are dry and arid, characterised by low levels of rainfall and moisture. This is important to keep the plant’s health throughout the year and the fruit at harvest time.

The growing area features sandy loam soil, which together with the weather characteristics of the region, promote proper ripening and aromas and colour richness. Here, in these lands, is where the vineyard’s charm begins.

The grapes are carefully monitored and hand-harvested when they hit optimal sugar-to-acid balance, ensuring the crisp, herbal characteristics of the grape remain intact.

Winemaking

Finca El Nevado “Chico Malo” Cabernet Sauvignon is crafted using a youth-driven winemaking philosophy that aims to balance bold varietal structure with high, fresh-fruit accessibility. Like the rest of the playful “Chico Malo” line, it is designed to showcase a strong, intense personality that breaks away from heavily traditional, over-oaked styles.

The fruit is destemmed, crushed, and moved into temperature-controlled stainless steel tanks. Fermentation is managed precisely to extract deep colours and prominent primary fruit notes without drawing out harsh, bitter seed tannins.

Rather than spending long years in heavy new barrels, the wine undergoes limited oak contact – 50% of the blend is aged for 8 months, while another 25% consists of young wine and the remaining 25% is aged on French oak staves in vessels. This provides just enough structural integration to yield soft undertones of dark chocolate, vanilla, and tobacco while keeping the primary focus on raw fruit.

The Final Blend: The result is a bright red-violet wine that features bold, voluminous tannins in the mouth while retaining a young, approachable style.

Tasting Note

Brilliant ruby-violet colour. The nose shows a balance between fruit and spice, highlighting roasted red pepper with a herbaceous finish, consistent with the palate. Firm tannins and good volume.

Goes well with

Finca El Nevado “Chico Malo” Cabernet Sauvignon pairs best with hearty, deeply savoury dishes that can match its robust tannic structure, high volume, and characteristic notes of roasted red pepper, plums, and spice. Because Cabernet Sauvignon inherently has firmer tannins and higher acidity than Malbec, it handles richer, fattier foods exceptionally well—the fat and protein in the food actively soften the wine’s grip on your palate.

Why not try – Thick cuts of beef with higher fat marbling, such as ribeye, New York strip, or prime rib, are perfect. The intense tannins in the Cabernet slice right through the rich fat, making each bite taste cleaner.

Or – Roasted Lamb: Garlic and rosemary-crusted rack of lamb or slow-roasted lamb shoulder. The herbal undertones of the meat echo the subtle, spicy varietal notes of the wine.

Cellaring

6 – 8 years with careful cellaring.
