Fratelli Degani Le Tobele – When we think of history and tradition, we cannot do other than imagining distant and forgotten times. The past is a warm and colourful place compared to the mechanical coldness of the present… although not all the time.
In certain things the tradition survives, carried on by the same loving hands of the past. Hands that caress the grapes as they have caressed the hair of their grandchildren, who, then, return them to the grapes.
This is what lies behind the historical name of wine production: the Azienda Agricola Fratteli Degani, whose name suggests how their activity is lived. A family management, in the truest sense of the word, where all the activities, from the first manual harvesting of the grapes, their drying for the glory of Amarone and Recioto, the vinification and, finally, bottling, are followed by family members and implemented according to traditional methods.
How do you reach perfection? Choosing only the best quality of the grapes available. The attempts have lasted centuries to get to the vineyards of today and the choice is made among the best clusters that then will give rise to Amarone, a wine noble and known all over the world.
The path of these clusters from the plant to your goblet is fascinating: kept in drying for three or four months in special plateaux, are crushed only after inspection, and authorization by the Authority in place (Siquria) in December/January, when the grape is Withered and the weight fell by about 30% concentrating the sugar content resulting in an increase in the alcoholic degree.
It is then passed to the steel tanks where the malolactic fermentation takes place and only at that point the wine is greeted by the barriques for a time that comes out from two to three years.
The grapes, party dried up, are softly crushed while removing the stalks. The fermentation temperature ranges from 24° to 27° C. Then the must is left for 15 days to macerate, acting a manual press at regular intervals (20 minutes, 3 times daily). Once the alcoholic fermentation is completed, the product is decanted and the malolactic fermentation starts. The wine is then stored in stainless steel tanks. Assembly and bottling are the final steps.
Deep ruby red wine with fresh and harmonic perfume, mainly fruity. Dry, with good persistence and intensity, velvety and well balanced.
Recommended with all kind of meat (roasted, braised and grilled) as well as with seasoned and fermented cheese.
If stored at uniform temperature of 14-15° C, laid and away from light sources, the wine maintains its characteristics unaltered for 2-4 years.
