Producer Profile

A native of Beine in the Chablis region, Christophe Patrice began working in the family business with his father and uncles in 1996. In 2006 he started his own venture with five hectares of vines. In 2011 he acquired the Daniel Roblot estate increasing his holdings to 22 hectares with an average vine age of 50-70 years. Today the Domaine has vines spread across the communes of Beine, Courgis and Chablis, from which we can offer Petit Chablis, Chablis and Chablis Premier Cru Beauregard and Montmains, following the extension of the estate.

The vineyards are planted at a low density of 5 800 vines per hectare and managed following a lutte raisonnée (sustainable) regimen. Favouring quality over quantity, the viticulture practices single guyot pruning instead of double guyot. For Christophe, Chardonnay expresses itself in Chablis like nowhere else, so he insists on vinifying his wines entirely in stainless steel tanks to preserve their typicity and freshness.

Phytosanitary products are only used when necessary and fertilization is only carried out as absolutely necessary according to the plots and their progress. This activity can therefore be considered that our way of cultivating the vine fits perfectly within the framework of a reasoned culture.

Viticulture

Located in the commune of Beine, the vines are between 40 and 70 years old and are planted in a Burgundian Kimmeridgian clay-limestone soil. The climate is characterised by long, harsh winters, unpredictable springs and hot, sunny summers.

Winemaking

Pneumatic pressing. Enzymatic settling for 12 to 24 hours at 15°C, followed by fermentation in temperature-controlled stainless steel vats. Malolactic fermentation carried out systematically.

Aged for 4 months in stainless steel tank.

Tasting Note

A mineral, floral and flinty nose. A complex palate with lemon and ripe fruit aromas and a long finish.

4-6 years with careful cellaring.
