It all began in 1980 when François Devictor, an agronomic engineer awarded a diploma from ESAP (Purpan Engineering school, Toulouse), decided to settle in Provence with the idea and desire of creating great wines.
François fell in love with the Domaine de la Sanglière in Bormes les Mimosas and immediately senses the potential of this idyllic site, located just a few steps from the Mediterranean Sea.
With a total surface area of 42 hectares, the estate was completely remodelled to meet strict production criteria and requirements. Everything was done to produce wines of excellent quality. The cellar was built. Production of rosé, white, and red wines under the Côtes de Provence designation could then begin…There is a lot of work to be done to move construction forward. To help the Devictor family save money, friends from all over France travel to La Sanglière and provide assistance, simply by setting up camp in tents amidst the vines for weeks.
It was in 1983 the year of the very first harvest at Domaine de le Sanglière – not only for François, but also for Rémy, his eldest son, then 16 years old.
A soil composed of micaschists and clay, marked by the absence of limestone and characterised by the proximity to the Mediterranean Sea.
Such a quintessence, the grapes selected to create this cuvée come solely from plots that are the best exposed on the estate. Harvest is done at night time to optimize the freshness of the grapes. The berries are then cooled down and de-stemmed. A short skin maceration under inert gas precedes the pressing. Then comes the time of settling, the must clarification and maturing on fine lees, a traditional vinification in thermoregulated stainless-steel tanks. Bottling takes place a few months later.
L’Apogée reveals a clear and crystalline colour. Its charming and seductive nose is marked by aromas of white flowers and fresh fruit perfected by a hint of spices. On the palate, the wine is smooth, caressing, almost airy, endowed with a delicate and saline freshness. A strong character and a perfect length.
The freshness of this rosé makes it a perfect wine for the aperitif or to go with a fish with delicate flesh, such as a roasted turbot and its fresh yuzu juice it will also pair well with scallops in citrus butter. Try this rosé wine with creamy cheeses such as Brie or goat’s cheese.
