Limestone Coast wines from South Australia are recognised for their quality, driven by unique terra rossa soils, a Mediterranean climate, and the cooling influence of the Southern Ocean. The region produces highly-regarded Cabernet Sauvignon, as well as Shiraz, Merlot, Chardonnay, and other varieties, known for complex flavours, mineral notes, and elegant structure. Key sub-regions within the Limestone Coast include Coonawarra, Wrattonbully, and Padthaway, each contributing to the diverse character of the wines.
LCW like to think of themselves as a humble winery producing great things. They are a family owned and operated business, crafting some of The Limestone Coast’s and Australia’s finest cool climate wines.
In South-Eastern Australia, the 2024 vintage was defined by early budburst and an accelerated harvest, prompted by a warm, dry spring and early summer conditions. While some regions experienced weather setbacks including spring frosts in parts of South Australia and hail in the Barossa and Clare Valleys, many vineyards benefited from cool nights and steady ripening. Yields tended to be lower than average, yet the grape quality was consistently high, with powerful, fragrant reds and vibrantly aromatic whites reported widely across the region.
The grapes are harvested early in the season when sugar levels are lower and acidity is high, ensuring the final sparkling wine stays refreshing and zesty.
The Blend: The wine is primarily made from Chardonnay grapes, which provide a crisp, citrusy base.
The Twist: A small percentage of Shiraz grapes is introduced to give the wine its signature pink colour and subtle berry flavours.
The Base Wine: The grapes are gently pressed, and the juice is fermented in stainless steel tanks at cool temperatures to preserve the delicate, bright aromas of green apple, lemon, and fresh strawberry.
The Charmat Method: Unlike Champagne (which ferments in individual bottles), Fox Tales is typically crafted using the Charmat method (or tank method).
The Bubbles: The still base wine is transferred to large, pressurized stainless steel tanks. Yeast and sugar are added to kickstart a second fermentation, which traps the natural carbon dioxide gas in the liquid to create the bubbles.
A zesty fresh sparkling rosé, made with a base of Chardonnay, with an added dash of Shiraz for colour! The Chardonnay is picked early for lemony fresh flavours, and the bass note (Shiraz) adds depth and of course colour. It’s fresh and bright and full of life, and the perfect glass for a warm afternoon.
Classic fish and chips or calamari fritti with a squeeze of lemon. Job done!
Ready to Drink: It is bottled immediately while still under pressure and sealed with a crown capsule. Because it doesn’t undergo lengthy aging, it is released fresh and meant to be enjoyed young.
