– Where there is no wine, there is no love –
The Estate is divided into 4 plots which were planted out between 1983 and 2001. Their philosophy is to innovate, and their objective is to offer a quality product based on the excellence of their work.
The first commercial vintage was in 2004 with the production of wines from 3 grape varieties, Verdejo, Tempranillo and Cabernet Sauvignon, with which they continue to produce excellent white, rosé and red wines.
The grape harvest is at night and by machine. All grapes are sourced from Estate owned vineyards. The temperature of the fermentation process varies from 8º-14ºC in order to maximise the vibrancy and aromatics of each grape variety.
Careful vinification takes place to maximise and protect the characteristics that Sauvignon Blanc offers when produced in DO Rueda. Fermented at cooler temperatures and for longer than usual to enhance the wines backbone and aromas.
Straw yellow colour, with lemony-greenish glints, leaving tears on the glass thanks to its oily consistency. Before swirling the glass, it creates a splendid impression, with a hint of white lime flowers, grapefruit citrus notes. When swirling these sensations are complemented with a sweet end note of ripe papaya. On the palate it is oily and enveloping with a fresh note of acidity, expressive on the edge of the tongue and a bitter finish of frosted citrus rind, and strong varietal flavours.
White bait with allioli (garlic mayonnaise).
Best for drinking in its youth to capture its full vibrancy.
